This recipe is one of my favorites from my mother’s recipe box. She always made these sandwiches for church dinners.
Raisin-Nut Sandwich Spread
1 cup sugar
1 egg
Juice of one large lemon
Mix and cook on stovetop until mixture thickens.
Allow to cool, then add
1 cup mayonnaise
1 cup chopped nuts
1 cup raisins
Mix again. Must be kept in refrigerator.
May use 1 1/4 ounces lemon juice instead of juicing a lemon.
Also, we used pecans.
