Now for this week’s recipe. Per special request by Ricky Taylor, I was asked for casseroles and meat and potato dishes. Enough of the sweets, he said. So I talked to my sister last night and she suggested three such recipes. This week’s is one our mother used to make. It is a good one to put in the oven on a Sunday morning as it takes 3 hours in the oven. Great even if the preacher is long-winded that day. Here goes, Ricky.

Stew Beef Casserole
1 pound lean stew beef chunks
1 can cream of mushroom soup
1/2 envelope dry onion soup mix
1/4 cup sherry
1 small can chopped mushrooms (including juice)
1/2 cup water

Combine all ingredients in casserole dish. Cover and bake 3 hours in a 300 degree oven. Serve with rice, mashed potatoes, or noodles. It’s your choice. Enjoy.
