My mother used to make this classic comfort food. This uses an updated method–the microwave.

Creamed Chipped Beef (Microwave)

3 tablespoons butter or margarine
3 tablespoons all purpose flour (not self-rising)
1 1/2 cups milk
3 oz. package (or jar) dried beef
1/2 teaspoon pepper

Microwave butter in medium bowl on high 45 seconds or until melted. Stir in flour until smooth. Add milk and stir until smooth. Microwave on high 5 to 7 minutes or until smooth and thickened. Stir every 2 minutes during this time. Tear dried beef into small pieces. Stir beef and pepper into sauce. Microwave on high 1 to 2 minutes or until warm. Serve over toast or English muffins.
