Here is another of my mother’s recipes…Good and easy.
Mama’s Pimento Cheese
1 pound sharp cheddar cheese
7 oz. jar pimento (use juice, too)
Mayonnaise and Salt
Grate cheese and pimento together. Add salt to taste and mayo to spreading consistency. Beat with electric mixer until smooth and creamy and may use a mixture of sharp and medium cheese.
