Here is another one of Kate’s favorites.
Slow Cooker
Turkey Loaf
1 pound lean ground turkey
1 egg, slightly beaten
1/2 cup diced yellow onion
1/2 cup diced sweet red bell pepper
1 cup whole grain bread crumbs
salt to taste
1/2 tsp. Pepper
1 tsp. Dried oregano, optional
1/3 cup barbecue sauce or tomato juice
1/3 cup ketchup
In a large bowl, combine all of the above ingredients, except the ketchup, and mix well. Shape into loaf and place inside a lightly sprayed slow cooker. Cover and cook on low for 5-6 hours.
Add ketchup to the top 30 minutes before serving and recover until serving.
