This week’s recipe is back by popular demand – and it is now Fall and sweet potatoes are readily available. Thanks to Lynn Liebenrood for her recipe.

Sweet Potato Pound Cake
1 box Duncan Hines yellow cake mix
1/2 cup oil
4 eggs
1 cup sugar
1 teaspoon cinnamon
1/4 cup water
1 1/2 cups cooked mashed sweet potatoes
Mix all ingredients, adding sweet potatoes to mixture last. Bake in a greased and floured bundt pan at 350 degrees for 50-55 minutes.

Glaze:
1/2 cup powdered sugar
1-2 tablespoons orange juice
Pour glaze over warm cake – it soaks in and is basically invisible.
If using canned sweet potatoes, you will need the 29 oz. can – and you will have a little left over.
