Here’s another easy recipe. We had this Monday night and it was very good.
Kate’s Baked Fried Chicken
Place thawed chicken breast tenderloins in a bowl of milk. Let soak for 20–30 minutes (Kate let them soak for more like 3 hours, and there were very tender).
In a large bowl, mix:
1/2 tsp. Salt
1 T. Season All
3/4 tsp. Peppers
1 cup flour
2 tsp. Paprika
Preheat oven to 400º F. Cut 1/2 stick of butter into several pieces and place in a 9×13 pan.
Allow butter to melt, spread it around pan, then spray any uncoated spots in the pan.
Shake excess milk off of the chicken, then coat with the breading mix.
Place chicken in the pan on cook for 20 minutes.
Turn each piece of chicken, then continue cooking for 20 more minutes, until juices run clear.
