This week’s recipe is a creation of Corky Lane’s. I am told it is very good.

Black Eye Pea Chili
(over rice)
1 pound of hamburger
1 pound of mild bulk pork sausage
1 large onion (diced)
1 medium bell pepper (diced)
1 small can of mushrooms (chopped)
3 cans Ro-tel tomatoes and green chilies
2 cans black eye peas

Saute onion, bell pepper, and mushrooms in a large pot on stovetop. Brown hamburger meat and sausage in the same pot. Add Ro-tel tomatoes and chilies and cook to boil over medium heat. Add black eye peas and turn down to simmer for 30-45 minutes. Add a few pinches of sugar and salt and pepper while simmering. Serve in a bowl over cooked rice. Top with grated cheese.
