I had a request this week for my chicken salad recipe. I should credit Ione as she is the one who gave it to me.
Chicken Salad
2 large chicken breasts
1 cup (or less) chopped pecans
3/4 cup (or less) seedless grapes
3/4 cup mayo (or salad dressing)
Stew, skin, debone and chop chicken. Add mayor or salad dressing to desired consistency. Stir in nuts, then grapes. I halve or quarter the grapes depending on their size. You can use dark meat too, if desired. Also is good using rotisserie chicken. The ingredient amounts are not set in stone- use more or less nuts, grapes, and mayo to suit your taste.
Oh, I almost forgot. My crockpot roast last week was good. I would recommend it!
