As for this week’s recipe, it is back by popular demand. It comes from Lynn Liebenrood and is oh-so-good!
Sweet Potato
Pound Cake
1 Duncan Hines classic yellow cake mix
4 eggs
1/2 cup oil
1/4 cup water
1 cup sugar
1 teaspoon cinnamon
1 1/2 cups cooked mashed sweet potatoes (use canned potatoes – get the 29-oz. can.)
Mix all ingredients, adding sweet potatoes last. Bake for 50-55 minutes at 350 degrees in a greased and floured bundt pan.
Glaze:
1/2 cup powdered sugar
2 tablespoons orange juice
Pour glaze over warm cake. It will soak in and is basically invisible. Very good and moist.
