This is the first recipe I put in my column and is one of my mother’s signature creatons. So good and so simple.

           Cheese Biscuits
1/2 pound sharp cheddar cheese
1/2 pound margarine
2 cups self-rising flour
1/4 to 1/2 teaspoon cayenne pepper
1/4 teaspoon salt
Pecan halves

Grate cheese and allow cheese and margarine to come to room temperature. Sift flour, then measure out 2 cups. Add cayenne pepper and salt to flour and sift again to mix in well. Mix margarine and cheese, then add flour mixture a little at a time. This is best done by hand and is a sticky and messy job. Chill dough before rolling into small balls. Top each with a pecan half pressed into top. Bake at 375 degrees approximately 11-13 minutes. Watch closely as these bake quickly. Cool on wire rack and store in airtight container – a tin works well. Do not use butter as it makes the cookies spread and run.
