Thanks to Christy Berry for this week’s recipe. I had it this past summer and was quite impressed, and I don’t consider myself a spinach fan. Just try this, though. It might make a believer of you, too.

Cheesy Spinach and Bacon Dip
10 oz. package of frozen chopped spinach, thawed and drained
1 pound Velveeta, cut into 1/2 inch cubes
4 oz. cream cheese, cubed
10 oz. can Ro-Tel diced tomatoes and green chilies, undrained
8 slices of bacon, cooled and crumbled

Place all ingredients except bacon in microwave safe bowl and cook on high 5 minutes or until Velveeta is completely melted and mixture is well blended, stirring after 3 minutes. Top with bacon before serving.
