Chicken Casserole
1 can cream of chicken soup (10.75 oz.)
1 1/3 cups water
3/4 cup uncooked white rice
1/2 teaspoon onion powder
1/4 teaspoon pepper
2 cups frozen mixed vegetables (or broccoli)
4 boneless, skinless chicken breast halves (about one pound)
1/2 cup shredded cheddar cheese
Preheat oven to 375 degrees. In 9×13 greased casserole dish, combine soup, water, rice, seasonings, and vegetables. Cut chicken into large chunks and place on top of other ingredients. Cover casserole with foil and bake approximately 50 minutes or until chicken is done and rice is tender. Remove foil, sprinkle cheese atop chicken. Allow to sit 10 minutes before serving.
