Texas Hash
From Deborah Ann Chestnut, Hamer

This is an old recipe passed to us from an aunt who lives in Texas.

1 lb. ground beef
1 or 2 large onions, chopped
1 large green bell pepper,
  chopped
1 large yellow bell pepper,
  chopped
1 large orange bell pepper,
  chopped (sweet)
2 large jars of spaghetti
  sauce (any brand)
1 cup uncooked rice
2 tsp. salt
Dash of black pepper

Cook beef in large pot with chopped onions, peppers, salt and pepper. Make sure your beef is good and brown. The peppers and onions will be cooked enough in that time.
Turn pot on medium heat and add both jars of spaghetti sauce and rice (uncooked). Stir well (one minute) and pour into a deep 4 quart casserole, or larger if need be. Cover with foil and bake at 350 degrees for one hour.
Note: This dish can be doubled for large crowds and is great served with corn on the cob and cornbread. It also holds up well for reheating.
