There is a fruity theme this week.
Both of these came from that old recipe box of my mothers that I found recently.
Banana Fritters
1 egg
Cinnamon to taste
Certified sweetener to equal 4 teaspoons of sugar
1/2 banana
1 slice of bread
Beat egg with cinnamon and sweetener. Add mashed banana. Break bread in pieces and add to banana mixture. Fry in nonstick skillet until brown. Flip and brown other side. Serves one.
Hot Applesauce Squares
4 slices bread, crumbed
1/4-teaspoon cinnamon
1/4-teaspoon nutmeg
2 tablespoons margarine, melted and cooled
2 cups applesauce (no sugar)
2 tablespoons lemon juice
Preheat oven to 350 degrees. Spread crumbs in shallow pan. Toast in oven 10 minutes. Transfer to small bowl; stir in cinnamon and nutmeg. Blend in margarine.
Press 2/3 of crumb mixture into bottom of an 8-inch square nonstick baking pan.
Combine applesauce and lemon juice and then spread over crumbs. Sprinkle remaining crumbs on top. Bake 30 minutes. Cool slightly. Cut into 16 squares.
Serves 4. If desired you may add sweetener to taste to both crumb mixture and applesauce.
