This week’s recipe was sent to me by my sister Judy.
Butter Pecan Coconut Cake
1 box butter pecan cake mix
3 eggs
3/4 cup oil
3/4 cup water
1 tub coconut-pecan frosting
Mix all and put in bundt cake pan. Bake at 350 degrees for approximately 30 minutes. Yes, the frosting goes in with the batter. Judy did make a light glaze using powdered sugar, milk and coconut extract to drizzle over the warm cake after removing from pan. She also had to bake the cake for a longer time than the recipe called for.
