This week I have another recipe from my sister’s mother-in-law Novella Fox of Taylorsville, NC.  It is one of Judy’s favorites.

Orange Coconut Cake
1 box orange cake mix
1/3 cup oil
small box (3 oz.) orange jello (dry)
4 eggs

Mix together and bake at 350 degrees in two 9-inch pans for 30 minutes.  Cut each layer in half so you will have 4 layers.

Frosting
12 oz Cool Whip
12 oz. coconut (divided- see note)
1 cup sugar
1 cup sour cream

Combine half of coconut with other 3 ingredients.  Frost cake between layers, top and sides.

Sprinkle sides and top with remaining 6 oz. of coconut.  Keep refrigerated.  (But it won’t last long because it is so good.)
